Extracting moisture from fresh bonito fish produces in it a highly condensed umami, the dried fish chunks are then shaved into thin flakes called Hanakatsuo which is commonly used as topping for Japanese pancake and octopus balls. Upon being placed on hot food, the heat waves cause the weightless bonito flakes to move about, giving it a special aesthetic appearance, and making the food look alive with the "dancing" flakes.
