Extracting moisture from fresh bonito fish produces in it a highly condensed umami, the dried fish chunks are then shaved into thick flakes called Kezurikatsuo which is commonly paired with dried sea tangle (kombu) to make soup stock “dashi”. Dashi is a classic flavor base for the vast majority of Japanese dishes including miso soups, noodle soups, oden hot pots.
