Sea tangle or kombu is an edible seaweed best known as the richest source of savory taste “umami” available in dashi broth, which is the flavor base of the vast majority of Japanese cuisines. The white powdery substance forms on the surface is a visible source of umami and should not be washed away. Heat the kombu gently in water instead of boiling it, then add bonito flakes (kezurikatsuoto) to the broth to make the signature awase dashi.
